Penley are returning to a more traditional methods of viticulture, with much of the work such as pruning now being carried out by hand to allow for maximum precision. A specific irrigation and frost management programme has been put in place alongside a soil cultivation and moisture retention initiative to promote microbial life in the vineyards.
Following separate fermentations in tank, the wine is aged in French oak for 12 months, which 50% is new, then followed by 6 months in stainless steel.
Grape: 100% Shiraz
Tasting Note: Brooding dark fruits and earthy ferrous notes lifted with spice. This is a well structured and intensely flavoured Shiraz. Star anise, berry compote, leather and chocolate intertwine. The minerally tannins drive the palate which is long and supported by savoury French oak notes. Rich dark and dense.
Food Match: Ideal with roast beef in a pepper sauce.
